GHAZIABAD: A man stirs boiling sugarcane juice in the traditional process of making ‘gur’ (jaggery) at a village during the winter season in Ghaziabad. The traditional method of making gur is very popular in the state of Uttar Pradesh from western part to Purvanchal despite so much advancement of technology. The making of jaggery needs special traditional skills and expertise which are generally carried forward from generations with some modifications. One can have a unique smell freshly made ‘gur’ from the villages of Uttar Pradesh where ‘jaggery’ is produced in a large scale. (PTI)
