Oats is multi-faceted when one needs to prepare quick and healthy bites. Earlier too, we had suggested healthy and nutrient-rich oats snacks. This time, Toshali Mandal is back with two more easy-to-make recipes with oats as a key ingredient.
Oats Khichdi
Ingredients
½ cup moong dal
1 cup of rolled oats
Few strands of coriander and curry leaves, chopped
1 teaspoon of cumin
1-2 bay leaves
1 inch ginger, chopped
1 onion, chopped
1 tomato, chopped
Chopped vegetables —
½ carrot, 4 beans, 1 potato, 1/4 cabbage, 1/2 cauliflower or broccoli
2-3 green and red chillies
1 cup nutrela
4 cups of water
1 teaspoon each of turmeric, red chilli powder, jeera powder, coriander powder, garam masala powder, black pepper powder
Pinch of hing (asafoetida)
1 teaspoon of ghee
Salt to taste

Wash and soak moong dal in water for 5 minutes. Heat ghee in a pressure cooker, add cumin seeds, hing, bay leaves and chillies. When they sizzle, add curry leaves and ginger. Saute till it turns aromatic. Now add the chopped vegetables and saute till they change colour. Add tomatoes and fry till they turn soft and mushy. Drain the water from half cup dal and add along with the spices. Fry for about 2 to 3 minutes.
Add 1 cup of oats, salt and fry for about 2 minutes. Pour 4 cups of water and mix. You can adjust the quantity of water to make it mushy or slightly grainy. On a medium flame, pressure cook for two whistles. Add the soaked nutrelas in salt water. Mix well. Finally, serve oats khichdi warm after garnishing with some coriander leaves and raita.
Oats Banana Pancakes
Ingredients
1.5 cups of rolled oats
2 large bananas
2 eggs
1 teaspoon of vanilla extract
1/2 cup of milk
1/2 teaspoon of cinnamon powder
1 teaspoon of brown sugar/regular sugar
1 teaspoon of baking powder
2 tablespoons of vegetable oil or melted butter
Maple syrup/honey (optional)
Chocolate syrup (optional)
Direction
In a food processor or a bowl, add oats and mashed bananas. Then, add the eggs. Pour the vanilla extract. Add milk, cinnamon powder, sugar and baking powder. Mix them well. Allow the mixture to rest for 15 minutes. Meanwhile, heat a non-stick pan and brush slightly with vegetable oil or butter. Use an ice-cream scooper or a ladle to pour the batter onto the pan. Allow t to cook on low heat. After you see bubbles on one side, flip and cook both the sides properly. Serve with chocolate syrup or maple syrup or honey and fresh bananas.
